Gimme S’More!
I’m a huge lover of the good ol’ S’mores treat, so the chances of me trying to recreate any recipe I find with the word “S’mores” in it are always high. This recipe is no exception!
I stumbled across this no bake treat as I was on the Beachbody blog one day looking for something for a client of mine. It caught my eye, I had everything I needed on hand, so I gave them a go! They were a great snack, and I have made them a few times since to perfect them even more!
Here’s how you make them!
No Bake S’mores Bars
Ingredients:
-2 whole wheat graham crackers broken into large pieces (to not confuse, 1 graham cracker = 1 sheet)
-1 large ripe banana, mashed
-1/2 cup all natural almond butter
-2 Tbl unsweetened cocoa powder
-4 scoops Chocolate Shakeology (divided use)
-3/4 cup part skim milk ricotta
-1 scoop Vanilla Shakeology
-2-3 drops marshmallow flavor
-3 Tbl organic coconut oil, melted
To make:
1. Line an 8x8 pan with plastic wrap (works better than foil….trust me on this).
2. Using a food processor or blender, process the graham crackers until they are fine crumbs. Sprinkle 1/3 of the the crumbs across the bottom of the pan. Set aside.
3. Mix together banana, 2 scoops of Chocolate Shakeo, cocoa powder, almond butter, and 1/3 of graham crackers in a medium bowl until well combined. Press this mixture into prepared pan. It is easiest to use a piece of plastic wrap to press down and flatten. Refrigerate for one hour to set.
4. Combine cheese, Vanilla Shakeo, and marshmallow flavor in food processor. Process until well blended, then spread the mixture over the chilled chocolate base. Set aside.
5. Combine the remaining scoops of Chocolate Whey Shakeo and oil in a small bowl and mix until smooth. Drizzle over cheese mixture and top with remaining graham cracker crumbs. Store in fridge. Enjoy!
A few things….
1. The first time I made these, I did NOT drizzle the chocolate. I pretty much made an additional layer. It was still delicious, but it was almost like a chocolate shell on top, which made it a little more challenging to cut. The above pic on the left is showing you how much chocolate I used initially. The pic on right is from the BB Blog. This is how I have been doing it since.
2. People will ask if they can use other protein powders. I cannot say they will work or how the taste will be. I can tell you that I tried our Recovery powder with this recipe, and it was not the same. It also varied a bit when I tried with vegan flavors of Shakeo.
3. It counts as 1/2 a red/3 tbl if you are following that plan.
4. The original recipe states the marshmallow flavoring is optional. I say it is a must. You can find it easily online.
