Hey there, Firecracker!

No, that’s not a pick up line I’d recommend using…..but it is the way you want to greet this delicious dish!

Every time I make these firecracker meatballs they are an absolute hit. Best part? Really easy to make. I think the biggest draw to these is that they are a spin on your basic meatball, and the sauce gives them the right amount of kick that your family will love.

Here’s how you make them!

INGREDIENTS:
-10 oz ground beef
-2 scallions, chopped
-thumb of ginger
-2 tablespoons mayo (I use olive oil mayo)
-2 tablespoons sour cream
-2 teaspoons honey
-1 teaspoon Sriracha
-1/4 cup panko crumbs
-2 tablespoons soy sauce
-Sesame seeds

TO MAKE:

STEP ONE: We can have lots of fun (NKOTB Fans, you know what I’m listening to as I type this). Start by chopping the scallions and separating the greens and whites. The white portion should be finely minced. Once complete, peel and mince ginger.

STEP TWO: Prepare sauce by mixing the may, honey, sour cream, soy sauce, and sriracha. Set aside.

STEP THREE: Prepare meatballs by combining beef, panko crumbs, scallion whites, ginger, an extra dash of soy sauce (I use about 2 teaspoons, but not always). Form into 12 balls that are about 1.5 inches in diameter. Cook at 425 for about 16 minutes.

STEP FOUR: Toss meatballs with the sauce to coat or drizzle if that is easier for you. Garnish with green scallions and sesame seeds.

STEP FIVE: Serve! I serve mine over rice (usually brown or jasmine) and with a side of green beans. You can easily change up the sides based on your preference. Enjoy!
